As Culinary Director, I see how fresh sourcing and scratch cooking strengthen health, satisfaction, and daily life.
In my kitchen, from-scratch cooking starts with fresh ingredients. I prepare each component with intention to achieve the right flavor and texture. This approach ensures residents enjoy meals that feel wholesome and satisfying.
When we cook with fresh products, we support resident wellness directly. We avoid heavily processed items and instead focus on whole foods. As a result, meals deliver better flavor and stronger nutritional value.
I adjust recipes to meet senior-specific needs while honoring resident preferences. Fresh ingredients give me the flexibility to fine-tune seasoning and texture. I can broaden flavors without compromising the integrity of the dish.
We also rework classic comfort foods to increase nutritional density and reduce unhealthy fats and sodium. I select leaner cuts of meat and rely on herbs instead of excess salt. Rather than frying, I roast or bake whenever possible. I also incorporate vegetables to boost nutrition and use slow-cooking methods to build depth of flavor without heavy sauces.
One resident favorite prepared entirely from scratch is Quick and Easy Chicken and Dumplings. I combine cooked, diced chicken with fresh carrots, celery, onion, house-made chicken stock, minced garlic, fresh thyme, salt, and pepper, then bring it to a boil. For the dumplings, I mix flour, baking powder, sugar, and salt. I cut in cold butter until the mixture turns crumbly, then add milk to form a thick batter. Once the stock boils, I spoon in the dumplings, reduce the heat, and simmer for five to 10 minutes until fully cooked.

Scratch cooking takes time and skill. However, that effort makes a lasting impact. Freshly prepared meals support wellness, enhance satisfaction, and create a dining experience that feels personal and comforting.
